The cake ingredients:
- 1 1/2 cups sifted plain flour
- 1/3 cacao powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1 cup coffee (1 cup warm water + 2 teaspoons instant coffee powder)
- 1/3 cup canola oil
- 1 teaspoon liquid vanilla extract
- 1 tablespoon white vinegar
- 1 handful of crushed walnuts
The frosting ingredients:
- 1 tablespoon cacao powder
- 100 g icing sugar
- 2 tablespoon water or almond milk
To make the cake:
- Preheat the oven to 180 degree celsius.
- Grease the cake pan with canola oil and dust with some flour. The cake pan I used is rectangular 9 inch.
- In a large bowl, mix the flour, baking powder, salt, cacao powder, salt and sugar.
- In a different bowl, mix the coffee, canola oil, vanilla and vinegar.
- Pour the liquid ingredients mixture over the dry ingredients gradually while you are mixing.
- When the batter is smooth, add the crush walnuts then pour it in the prepared pan and bake for 25-30 minutes.
- Remove from oven and let it cool for 10 minutes then turn the cake out of the pan and let it cool completely on a rack.
To make the frosting:
- In a small bowl, whisk all the ingredients together using using a fork until the mixture is smooth.
- Pour over the cooled cake.
