Basic Hummus

The ingredients:

  • 1 cup dried chickpeas
  • 1/2 cup Tahini
  • 1/4 cup lemon juice
  • 1 teaspoon salt

Garnishing ingredients:

  • Olive oil
  • Parsley
  • Cooked chickpeas
  • Paprika

To make the Hummus:

  1. Wash the chickpeas
  2. In a large bowl, soak the washed chickpeas in water. Ideally, the water line should be 2 inches over the chickpeas. Leave it in the fridge overnight
  3. Drain from water again
  4. Cook the chickpeas with water in a large saucepan
  5. Bring to boil and remove the white foam
  6. Reduce the heat to low-medium and cook for about an hour or until the chickpeas are tender and can be smashed easily between fingers
  7. Remove from the heat and keep it aside to cool
  8. Drain but save some of the cooking water aside in a clean bowl
  9. Peel the chickpeas
  10. Using a food processor, process the chickpeas with a half cup of the preserved cooking water for 1-2 minutes
  11. Add the Tahini, lemon juice and salt
  12. Process further until the mixture is smooth and creamy
  13. Taste
  14. Garnish and serve
