The ingredients:
- 1 cup dried chickpeas
- 1/2 cup Tahini
- 1/4 cup lemon juice
- 1 teaspoon salt
Garnishing ingredients:
- Olive oil
- Parsley
- Cooked chickpeas
- Paprika
To make the Hummus:
- Wash the chickpeas
- In a large bowl, soak the washed chickpeas in water. Ideally, the water line should be 2 inches over the chickpeas. Leave it in the fridge overnight
- Drain from water again
- Cook the chickpeas with water in a large saucepan
- Bring to boil and remove the white foam
- Reduce the heat to low-medium and cook for about an hour or until the chickpeas are tender and can be smashed easily between fingers
- Remove from the heat and keep it aside to cool
- Drain but save some of the cooking water aside in a clean bowl
- Peel the chickpeas
- Using a food processor, process the chickpeas with a half cup of the preserved cooking water for 1-2 minutes
- Add the Tahini, lemon juice and salt
- Process further until the mixture is smooth and creamy
- Taste
- Garnish and serve
