Roasted Cauliflower with Tahini Sauce

If you are searching for a healthy recipe for cauliflower, I’ve got delicious one for you.

Ingredients:

  • 1 cauliflower head
  • 4 crushed garlic cloves
  • 2 teaspoons dried coriander
  • 1 teaspoon cumin
  • 1 teaspoon curcumin
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked sweet paprika
  • 1 lemon juice
  • 4 tablespoons olive oil

Method:

  1. Preheat the oven to 220oC.
  2. Cut the cauliflower head into florets and reserve the fresh green leaves. Wash the florets then dry from water.
  3. Mix all other ingredients and pour over the florets. Toss well then store in the fridge for 2 hours.
  4. Line an oven tray with parchment paper. Then, with the green cauliflower leaves topped with seasoned florets.
  5. Cover the tray with parchment paper and aluminium foil and seal the tray edges well.
  6. Roast in the preheated oven for 40 minutes or until cooked.
  7. Remove the covers, then bake for ten minutes or until florets get the nice golden colour.
  8. Serve with green salad and tahini sauce and eat with pita bread.

To make the tahini sauce:

Mix in a medium bowl the following ingredients:

  • 1 cup tahini
  • 1 lemon juice
  • 2 tablespoons greek yogurt
  • 1 crushed garlic clove
  • Pinch of salt
  • 1/2 teaspoon cumin
  • Chopped parsley

If the sauce is still thick after mixing add some water gradually till you get the right consistency
