Fig jam is my family favourite kind of jams. Try my simple recipe and let me know how you find it in the comments.
The ingredients:
- 1 kg dried figs.
- 1 kg granulated sugar.
- 1 litre of water to make the jam.
- Water to soak the chopped figs.
- Few geranium leaves.
- 3 tablespoons sesame seeds.
The method:
- Chop off the hard stem of the dried figs. Then, cut each fig into quarters.
- Soak the chopped figs in water for 6 hours. Then, drain from water.
- In a large saucepan, add the sugar, water and geranium leaves. Cook over low heat and let it boils slowly for six minutes.
- Add the chopped figs to the saucepan and cook over low heat for half an hour.
- Roast the sesame seeds in a small pan till they get a nice golden colour. Leave aside to cool down to room temperature.
- When the liquid amount in the saucepan is reduced to half, add the roasted sesame seeds, stir them in the mixture and turn off the heat.
- Let the jam cool down to room temperature, then cover the saucepan.
- The next day, transfer the jam to clean and dry jars.
- Cut parchment paper to circles and place each one on the jam surface. Then, tighten the jars’ lids.
- Store in the kitchen pantry.
